Rare NZ heirloom. Pie Melon (Citron) is not eaten fresh like water melon. It has a hard flesh which is used for preserves, pies, sweet pickles, candying and jam. Citron fruits keep for 6 months and can be processed after the summer canning chores have slowed. For seed saving, remove the centre of the melon with the greatest seed concentration. The remainder of the flesh will be almost seedless. Pick the seeds out one by one and rinse thoroughly. (SS p.104-5)
